How these gluten free biscuits are differentįor so long, I was so obsessed with light and flaky biscuits, with layers upon layers of buttery goodness. So when I realized that I was making rice or gluten free pasta night after night, even if the rest of the meal wasn't a repeat, I found it inexplicably sad. And I don't want to prepare the same meal every night any more than they want to eat the same meal every night. They're just going to eat it and forget it, no matter how good it is. I don't want to spend forever making dinner. But dinner creeps up on me every day just like it probably does with you.

I know it sounds kind of ridiculous, since I cook and bake like it's my job (because it is). I don't know about you, but I hate making dinner for my family every night. You can't beat the taste or the convenience! TIP:These biscuits are absolutely AMAZING fresh out of the oven (yes, you must let them cool at least a bit!) but they reheat beautifully the next day in the oven or microwave.Tender and light gluten free drop biscuits are ready in 20 minutes, start to finish. Remove from the oven when the tops of the biscuits are just beginning to turn golden!! ( Photo 9) Place biscuits on prepared tray in a double row with edges just touching to encourage rising. Turn the biscuit dough onto a well flour surface and gently pat to 1 ½ in. Add the vegan buttermilk to the flour mixture and use fork to gently mix together until no dry spots. Sift dry ingredients together ( Photo 2) and use a fork to 'cut' in the coconut oil creating a slightly lumpy flour mixture ( Photo 3 &4). This is your vegan Buttermilk! Let this curdle a bit while you prepare the flour mixture ( Photo 1). Measure out your almond milk into a small bowl and add 1tsp of apple cider vinegar and mix well.
